Having travelled and worked in Britain, I have gained extensive experience and that I have return home, I can wait to spoil my guests. I am caring in giving you the best service possible in our fantastic “Roots” restaurant. My passion for wine will only add to the unforgettable gastronomic feast.

:: Philippe Gilbert Wagenfuhrer


Philippe Wagenfuhrer, the Chef Patron of Roots Restaurant is a welcome addition to the Forum Homini Team. Philippe has worked all over the world in countries such as Antigua, Barbados, United Kingdom and France.

Working most recently as Executive Chef at the Atrium Restaurant, Sandton Sun & Towers, Carlisle Bay-Antigua (a five star de luxe establishment of 88 suites) and a number of restaurant and conference facilities. Philippe has also held front-of-house positions, as in Food & Beverage Manager at the Post House in Edinburgh. He has a passion for food and people and his skills are very suitable for Roots Restaurant

What an opportunity for my career!! I have joined “Roots” team.

An unparalleled and unique restaurant, contemporary in style and fun… Having to match the food to the style is a great challenge. Under the supervision of Philippe, I am allowed to experiment, create and no limit but the sky. We are making everything in house from jams to croissant or sausages.

We would like to create a new South African gourmet cuisine together with the help of local farmers having access to the freshest and best ingredients; we hopefully will be leading and encourage others within the region to follow.

No easy ways at Roots …

We make everything in house. A wonderland for a pastry chef like me. The satisfaction of our guest eating a homemade croissant or chocolate soufflé freshly baked, just out of the oven and seeing the satisfaction in their facial expression gives me all the encouragement I need. Being amongst such a creative and willing team is a great pleasure. It is making our hard and long difficult job worthwhile. Being able to use the best chocolate obliges me to succeed in my desert making. Seeing apricots Sunripened apricots grow on the farm makes our jams so much better than supermarket jams filled with preservatives and additives.

The proof is in the eating of the pudding…
